PLANTATION
Lorving Jesus Calderon's farm is relatively young, most coffee trees are about 5 years old and are just getting in shape. With the right conditions and good care, coffee trees achieve the best results and yields around the 6th year. The plantation is located on the slopes of the Santa Rita de Copán Mountains, at 1,400 meters above sea level in Las Peñas. Farmer Loring Jesus Calderon manages nature in a close way, referring to traditional farming practices.
Coffee trees are grown here in the shade of banana trees, which helps maintain the local species diversity and microclimate. It also has a very positive effect on the resulting taste of coffee. Coffee cherries ripen gradually in the shade of other trees and are harvested by hand. Thanks to this, we can enjoy the unmistakable sweet fruity taste in the cup, which is further enhanced by the dry method of processing (so-called dry process). That's why coffees that were dried in the sun during processing are so popular and sought after.
REGION
Copan is one of the 6 main Honduran coffee regions, which is characterized by a balanced taste, with a long-lasting aftertaste and chocolate tones. The conditions for growing coffee are very similar to those in Costa Rica, Guatemala and Nicaragua. Farms are small in most cases.
VARIETY
Parainema is a relatively unusual hybrid bred in 1980 by the IHCAFE (Instituto Hondureño del Cafe) research center in Honduras. The main goal of breeding was, as in most cases, to develop a crop resistant to pests. In this case against rust and parasites (nematodes). Although this variety did not initially have the ambition to achieve the quality of selected coffees, the higher altitude and climatic conditions fully developed its unexpected potential. The result is very interesting taste properties, clear and pure taste in a cup with unmistakable tropical fruit tones.
